Since Simon is an uncommon name in Ireland, and since I see Simon Aherns in Griffith's Valuation only in Cork, I would try the enormous multivolume compendium of Kerry and Cork information called O'Kief Coshe Mang, Slieve Lougher and Upper Blackwater Ireland.  The printing is very small and each volume is separately indexed, but I have found many obituaries, probate records, memorial inscriptions and vital records in it for my McCarthys and Mayburys in far western Kerry.  There is a copy of it in a few libraries I know of--you can do a search on to see if there is one near you.  Bring a magnifying glass!

I don't know if this person is related - but I have in my tree a Rev. John Boyce McCarty who, I believe, was born in about 1855 - probably Ireland.  He married Maud Hutchings in 1800 in Armagh, Ireland and died in 1923 in England.  Unfortunately I don't know who his parents were but let me know if you want to compare notes.  Have a picture with him in it.
